Foods I Have Been Loving Lately

The last two segments of this blog (1.0 and 2.0) were popular, so I would love to share more of my favorite foods with you! I think it is wonderful that you are interested in finding healthier foods to incorpoarte into your diet.

I have been gluten free for 7 years, pescatarian for 5 years, as well as vegan and sugar free for 3 years. As a result, I have become accustomed to eating very healthy. Vegan, gluten and sugar free foods have come a long way from when I first started my journey. Today, when you walk into many grocery stores in the States, there are “All Natural,” “Gluten Free,” or “Whole Food” isles. When I was first diagnosed with celiac disease, there was not even “GF” or “Gluten Free” labeling on any products. I had to read and memorize the ingredient lists on many items, and even then there was still a chance of cross-contamination in a product’s manufacturing facility. So, it has been a blessing that many people were attracted to these diets because of their health benefits or else food labeling might still seemlingly be in the dark ages.


#1 Avocado

Did you know that avocado is a fruit, and not a vegetable?



I have always loved avocado, but just recently started eating it more. I actually have begun eating half an avocado almost daily now. It is such a healthy fat, fills me up, and serves as the perfect snack. This is how I cut avocado:


I add salt, pepper, and olive oil before using a spoon to scoop out the squares individually because I find they add more flavor.

Also, instead of throwing away the pit, you can grow your own avocado tree!


#2 Sweet Potato

Did you know that a yam and sweet potato are the same thing?



Sweet potato skins are edible! It is a common misconception that they are not, and if you need further proof, here you are. So, please do not peel the skin off of sweet potatos. The skin contains many important nutrients including fiber, beta carotene, potassium, iron, vitamins C & E, and folate, and that is just in the skin!

I have also just recently begun eating a microwaved sweet potato almost daily. It is an easy and nutritious snack to make.

This is how I make my sweet potato:

  1. Wash the sweet potato off under water with a paper towel.
  2. Put the sweet potato on a paper towel in the microwave for 3 minutes.
  3. Turn the potato over and put it in for another 2 minutes.
  4. After the time is up, stick a fork in the sweet potato and see if it is the tenderness you like. This step depends on how you like your potato and on the size of your potato. If it is not soft enough put it in for more time until the potato is to your liking.
  5. Remove the potato from the microwave and place the potato on a plate. (Be careful because the potato will be very hot!)
  6. Cut the potato in half and down the middle of the halves several times.
  7. Add olive oil, salt, and pepper.
  8. Enjoy!

Samantha recently introduced me to these chips and they are delicious! These are the flavors I have tried thus far and I loved them. I dip them in salsas, hummus (discussed in 1.0), or eat them plain. They taste great any way you eat them. I love the seasoning and spices on them because eating raw foods sometimes gets bland. I highly recommend giving them a try!


#4 Rice Cakes & Crackers

I have been eating rice cakes and hummus (discussed in 1.0) for years now. It is my go to snack. Being gluten free it is difficult to find foods of certain textures. Rice cakes are really unique in this way because they are like a giant popcorn chip. I love dipping rice cakes in my Dr. McDougall’s Soups (featured below). This is a huge comfort meal for me. I have my soup, as well as my rice cakes and hummus together and it is the perfect meal. Rice cakes also have a long shelf life which I find convenient.

These wasabi rice crackers are extra special. Samantha actually introduced me to these and I fell in love. They are amazing with hummus and so spicy I do not think I could manage eating them without it. They have the perfect kick in them and I definitely recommend trying them if you have not already!



#5 Right Foods Dr. McDougall’s Soups

I have been eating these soups since I was diagnosed with celiac disease in 2012. They are so delicious and there is such a wide variety of flavors that I just do not get sick of them! I also have already mentioned, but I will say it again, I eat them with rice cakes and scoop the soup out like a spoon with the rice cake. The rice cake soaks up all of the soup and tastes amazing. All of these soups are vegan and gluten free. I am a huge supporter of these soups and my favorites (could never chose just one!) are pictured above.
